Happy summer supper.
Aug. 17th, 2007 06:59 pmChop up some cooked chicken, heirloom tomato, red bell pepper, basil, and mint (all except the chicken from the farmers' market). Mix with plain cooked couscous. Squeeze some lemon juice over the result. Serve with a glass of nice crisp pinot grigio. (A mojito would also be nice, or vinho verde.)
I bet it'll be even tastier tomorrow after it chills overnight. If it lasts that long.
